Greek Chicken and Spinach Meatball Gyros
Burgers and meatballs are one of my favorite meal ideas for picky eaters. Kids always seem to love them served on a bun, in a pita or nestled into pasta. They are cheap, flavorful, easy to make and a great way to sneak in an extra serving of veggies, since you can fold finely minced baby spinach or riced cauliflower right into the meat mixture.
Meatballs with Greens!
For this Greek Chicken and Spinach Meatball Gyros recipe, I started with combination very similar to my Turkey Spinach Sliders recipe, but swapped in Greek herbs and seasonings
I love the combination of fresh herbs, including dill, parsley and a bit of mint and the fact that all of those herbs mask the fact that I’ve also added a half cup of baby spinach to the mix for an extra helping of greens! Lots of lemon juice and cumin add additional layers of flavor.
Special Sauce
Once you’ve shaped the Greek Chicken and Spinach Meatballs, pop them in the oven for 20 minutes to bake up golden and beautiful. Meanwhile, you can whip up the quick and creamy Cucumber Yogurt Sauce. This zippy, tangy 4-ingredient sauce adds SO MUCH extra flavor to this dish. And its easy to make so don’t skip it!
Once the Greek Chicken and Spinach Meatballs are out of the oven, pile them into warm pita flatbread and top with your favorite garnishes. We like finely sliced red onions, cucumber slices, fresh greens and fresh dill.
Gyros not your thing? No problem! These Greek Chicken and Spinach Meatballs are also delicious piled onto a bed of greens for a hearty salad or nestled into a bowl of lemony Greek rice or orzo pasta. YUM!

Ingredients
- 1 pound ground chicken
- 2 cloves garlic, minced
- 1/2 cup finely minced fresh baby spinach leaves
- 1/4 cup bread crumbs
- 1/4 cup minced fresh parsley
- 2 tablespoons minced fresh dill
- 1 tablespoon minced fresh mint
- 1 tablespoon lemon zest
- 2 teaspoon ground cumin
- 1/2 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 4 pieces pita bread
- Thinly sliced red onion, for topping
- Thinly sliced cucumber, for topping
- Mix greens for fresh baby spinach, for topping
- Cucumber Yogurt sauce, for topping (see below)
Instructions
- Preheat oven to 400 degrees and line a rimmed baking pan with parchment paper, set aside.
- In a large bowl add ground chicken, garlic, baby spinach, breadcrumbs, parsley, dill, mint, lemon zest, cumin, kosher salt and black pepper. Use your hands and mix together until fully combined. Shape the ground chicken into 16 same sized meatballs and place onto the prepared baking pan.
- Bake for 20-25 minutes or until fully cooked. They will feel firm to the touch and slightly browned when ready.
- Add 4 meatballs per pita and top with red onion, cucumber, mixed greens or baby spinach and cucumber yogurt sauce.

Creamy Cucumber Yogurt Sauce

This creamy, tangy tzatziki-inspired sauce is the perfect topping for Gyros, sandwiches and grilled meats.
Ingredients
- 1 cup plain Greek yogurt
- 1/3 cup seedless cucumber, shredded
- 1 tablespoon fresh lemon juice
- 1 garlic clove, minced
- 1 tablespoon finely chopped fresh dill
- Salt and pepper to taste
Instructions
- In a medium bowl, combine Greek yogurt, cucumber, lemon juice, garlic and dill. Stir until smooth. Season with salt and pepper to taste.
- Sauce can be stored, covered, in the refrigerator for up to 2 days. Stir well before using. Serve with Gyros, grilled meats, or as a dip with pita and veggies.
