I just realized that I’ve talked about this one before but with grilling season in full swing it’s probably worth mentioning again. Whenever you make grilled chicken cook an extra breast and put it aside for lunch. Next day, dice up your chicken breast. Add two or three green onions, a few chopped basil leaves, about a teaspoon of fresh lemon juice and two Tablespoons of Greek Yogurt. I also add a handful of thawed frozen peas. Lilly eats hers with her hands. I like mine in a baguette or with toasted pita chips. Delicious, nutrition and you don’t have to turn on the oven or stove.
Oh and a random side note…even if your child can’t yet manage raw carrots they’ll probably enjoy cold, cooked baby carrots as an easy snack. I micro-steam them half a bag at a time and keep em in the fridge (we slice the bug ones in half lengthwise to prevent choking) Great to take along to the park too.
