Slow Cooker Guinness Beef Stew

  • Author: Homemaker's Habitat

Description

This Slow Cooker Guinness Beef Stew is so incredibly rich and delicious. Its perfect for Sunday supper or for entertaining family because the slow cooker (or Instant Pot) ends up doing most of the work.

Ingredients

Scale
  • 2 tablespoons vegetable oil
  • 2 lbs. beef chuck roast, cut into 2 inch cubes
  • Kosher salt
  • Pepper
  • 2 tablespoons flour
  • 1 large onion, diced
  • 2 large carrots, diced
  • 2 stalks celery, diced
  • 2 tablespoons tomatoes paste
  • 1 pint Guinness Extra Stout
  • 4 cups beef broth
  • 1 lb. potatoes, diced into 1 inch pieces
  • 1 small bunch fresh thyme
  • 1 small bunch fresh parsley
  • 1 tablespoon cornstarch
  • 3 tablespoons Worcestershire sauce
  • salt & pepper to taste

Instructions

  1. Pat beef chucks dry with paper towels. Season on all sides with salt and pepper and dust with flour to lightly coat. Heat vegetable oil over high heat in a large skillet or dutch oven or use the “brown” setting on your multi-cooker.
  2. Brown beef in batches, turning occasionally, until each piece has a golden brown crust. Remove browned beef to a small bowl.
  3. Meanwhile add onion, carrots and celery to the pan and saute for about 5 minutes until they just begin to soften. Add tomato paste and continue to cook for 2 minutes more until tomato paste begins to darken in color. Add Guinness, beef broth, and potatoes.
  4. Tie the parsley and thyme together with kitchen twine to keep them in a bunch and add to the pot. Cover slow cooker and set to cook for 4 hours on high or 8 hours on low.
  5. During the final 30 minutes of cooking, combine the cornstarch and Worcestershire sauce in a small bowl to create a smooth slurry. Slowly drizzle into the slow cooker, stirring to combine. Continue to cook until the stew has achieved a rich consistency.
  6. Season with salt and pepper before serving.
