Nothing sets a laid-back party vibe like a pitcher of margaritas, a big bowl of chips and a few delicious Mexican-inspired appetizers. Of course, everything feels more festive if you’re usingĀ gorgeous handmade Mexican table linens and party decor. Just in time for Cinco De Mayo, I got together with my neighbor and friend Karli, to host a little Happy Hour Fiesta filled with Easy Dips, Drinks and Decor from her amazing globally-sourced online boutique Casa Verde.
Karli’s shop is full of unique, ethically-sourcedĀ handmadeĀ items including jewelry, home decor and accessoriesĀ she picks up on her globe-trekking adventures around the world. Her most recent trip took her to the Yucatan in Mexico (you can read more about her adventures and travel tips on the CV blog). While there, she picked up a ton of amazing decor items that are perfect for summer entertaining. I am totally in love with her table runners, napkins and those incredible felted drink coasters! Its amazing how just a few authentic, well-made, colorful pieces managed to completely transform the vibe in the kitchen. As soon as we laidĀ out that table runner it was a fiesta!
Of course, no fiesta is complete without delicious drinks and apps. Jon whipped up a batch of his famous, fresh and delicious Killer Cilantro Lime Margaritas.
For food, I kept things super-simple with three deliciously easy dips: a simple pico de Gallo with some black beans thrown in.
A gorgeous, easy guacamole (no recipe required. Just combineĀ a diced tomato, a diced small onion, a handful of fresh cilantro, one small jalapeƱo and 4 or 5 smashed avocados, add the juice of one lime and some salt and serve it up).Ā
And the real showstopper of the afternoon: Ā Mexican Street Corn Dip.Ā
Oh my goodness is this stuff good! And so easy to make using frozen roasted corn! You just toss the corn in a pan with some butter and fresh diced jalapeƱo and let it toast for a bit. Then I stirred in a mix of yogurt and mayo to give it a tangy-yet-creamy texture. Next add lots of fresh cilantro, lime juice and two kinds of cheeses. Holy moly is this stuff awesome.

Mexican Street Corn Dip
Serves 4
Ingredients
16 ounces frozen roasted sweet corn
1 small jalepeno, diced with ribs and seeds removed
1 tablespoon butter
1 tablespoon mayonnaise
2 tablespoons greek yogurt
2 tablespoons diced fresh cilantro
2 teaspoons grated cojita cheese
2 teaspoons crumbled queso fresco
1/2 teaspoon Chile powder
Juice from 1 Lime
Salt & Pepper to taste
Instructions
- Melt butter in a skillet over medium heat. Add corn and jalepeno and cook, stirring occasionally until the corn is golden and the jalepeno is soft, about 10 minutes.
- Transfer corn mixture to a large bowl and add mayonnaise, greek yogurt, cilantro, cheese, Chile powder and lime juice. Toss to combine. Season to taste with salt.
- Serve immediately with chips for dipping.
