I can clearly remember the first (and last) time I tried salmon patties. I was about 18 years old, on a date at one of the fancier restaurants in my hometown. I wanted to order fish because I was trying to be sophisitcated and the idea of salmon patties intrigued me. They arrived…I took one bite and that was about it. They were fishy and mealy and not at all what I had hoped for. I’ve never ordered them or made them since. Until about a week ago…
Through the wonders of the interwebs, I’ve recently made a new acquaintance named Carolyn. She’s a culinary dietitian and instagrammer who just launched a blog called The Dinner Shift. She has some really great ideas for wholesome, family-friendly weeknight meals. I highly recommend you check it out. But I’ve digressed.
A couple of weeks ago Carolyn shared a recipe for Asian Salmon Patties with Teriyaki Mayo. And I had a lightbulb moment. Take those and transform them into Teriyaki Salmon Sliders! My kids adore teriyaki salmon. If anything could transform canned fish, it has got to be teriyaki sauce. A few days later, I noticed canned wild salmon at Aldi for about $2 a can so I grabbed a few.
To absolutely ensure my kids would love these, I decided to serve them slider-style on pretzel rolls, which they already love when I serve my Turkey Spinach Sliders. Borrowing heavily from Carolyn’s recipe, I made mini-sized patties that would perfectly fit on our little pretzel rolls, then served them topped with that teriyaki mayo, sliced red onions and Bibb lettuce. Teriyaki Salmon Sliders!
For side dishes, I offered baked sweet potatoes and those Persian mini cucumbers, sliced in half and topped with salt and toasted sesame seeds. When the kids came to the table to eat, there were absolutely no complaints. They loved everything and even went back for seconds. In fact, Lilly assessed the Salmon Sliders like this:
“Mom, these are like teriyaki salmon AND a burger at the same time. MIND BLOWN!”
If you ask me, that’s some awfully high praise for humble canned salmon. These will be on weekly repeat for basically ever.

Ingredients
- 3 Tbsp minced green onion
- 2 Tbsp low sodium soy sauce
- 1 Tbsp orange juice
- 2 tsp toasted sesame oil
- 1/2 tsp orange zest
- 1/2 tsp minced garlic
- 1 tsp minced fresh ginger (or refrigerated jarred ginger)
- 1 14-oz can wild salmon, drained
- 1/3 cup panko breadcrumbs
- 1 eggs
- 2 Tbsp olive oil
- 1 teaspoon teriyaki sauce
- 1/4 cup mayonnaise, any variety
- 1/2 Tbsp orange juice
6 pretzel rolls or slider size pretzel buns, split in half
Optional garnishes: Bibb lettuce, thinly sliced red onion, avocado, cucumber slices, toasted sesame seeds
Instructions
- In a large bowl, whisk together the onion, soy sauce, orange juice, sesame oil, orange zest, garlic and ginger. Pick through drained salmon to remove any large bones (they are actually edible and full of calcium if you prefer to leave them). Add salmon and breadcrumbs to the bowl and use your hands to combine with the wet ingredients. Add the egg and continue to mix until well combined. Shape into 6 patties, each about the size of a hockey puck.
- Heat 2 Tbsp olive oil in a large, heavy skillet over medium high heat. Once hot, add patties, spacing them evenly in the pan (you may need to cook in two batches). Cook patties over medium heat for about 4 minutes, or until the bottoms have developed a golden brown crust. Flip and cook 3-4 minutes more.
- Meanwhile, whisk together the mayonnaise, orange juice, and teriyaki sauce in a small bowl. If desired, toast pretzel buns in an oven, toaster or toaster oven.
- To serve, place each salmon patty on a toasted pretzel roll and top with teriyaki mayo and garnishes as desired.
