Super Simple Summer Peach Cobbler

Description

This simple, traditional Summer Peach Cobbler Recipe combines delicious peaches and an easy biscuit topping for the perfect summer dessert.


Ingredients

  • 2 pounds ripe peaches
  • 1 tablespoon + 2 teaspoons sugar, divided
  • 3/4 cups + 1 tablespoon flour, divided
  • 1/8 teaspoon salt
  • 1 teaspoon baking powder
  • 3 tablespoons cold butter, cut into small pieces
  • 1/3 cup half and half
  • 1 tablespoon raw or demerera sugar (optional)

Instructions

  1. Preheat oven to 375 degrees F. Heat two cups of water in a medium saucepan until boiling.
  2. Dip peaches in boiling water for 10 to 15 seconds, drain on paper towels and carefully slip off the peach skins. Cut the peaces in half and remove the pits. Cut the peaches into 1/4 inch slices.
  3. Place pieces in a medium bowl and toss with 1 tablespoon of sugar and 1 tablespoon of flour. Pour fruit into a 1 quart ceramic baking dish and set aside.
  4. In another bowl, combine 3/4 cup flour, salt, 2 teaspoons sugar and baking powder. Cut the butter into the flour with your fingers until pieces are the size of peas.
  5. Remove 1 tablespoon of the half & half and set aside. Add remaining cream to the flour mixture and mix with a fork just until a lose dough starts to form.
  6. Pour dough mixture on top of fruit in baking dish. Brush biscuit topping with reserved cream and sprinkle with raw or Demerara sugar (if using).
  7. Bake cobbler in preheated oven for 45 minutes or until the topping is golden brown and fruit is bubbling in the dish.

Notes

Serve warm with cold cream or ice cream.
