Pasta is the ultimate chameleon food. Dress it up, dress it down. Serve it cold in the summer or under a layer of heavy cream sauce in the winter And for special occasions — it can slip into a little black dress. This gorgeous, elegant Squid Ink and Seafood Pasta features linguine tossed in a luxurious squid ink sauce and dotted with shrimp, lobster and tomatoes. Elegant, unexpected and, most important, totally delicious. This is the perfect dish to serve on New Years Eve, Valentine’s Day or any other elegant occasion when you want to wow.
If you’ve never tried squid ink, the idea may sound a bit intimidating but I can assure you it’s actually quite delicious– it has a rich seafood flavor similar to shrimp, and lends a velvety texture to the dish (plus that color). You might have seen black pasta made with squid ink at gourmet shops — its jet black color and slight seafood flavor is totally unique. But for this dish, we’ve taken things one step further. For this pasta, we’re using the squid ink as our sauce. You can make this dish with black squid ink pasta or with regular pasta like I did. Either way, you’ll end up with a gorgeous and unexpected dish.
Even better, the sauce comes together easily starting with Aneto Squid Ink Paella Broth. Combining fish, squid ink, tomatoes and aromatics, Aneto broth lends a perfectly balanced seafood flavor and dramatic ebony color to the sauce without much fuss.
This made the perfect dish for a holiday date night at home the other night. Jon and I will be celebrating New Years Eve in downtown Chicago tonight. Our first NYE out in over a decade and I’m excited, but wasn’t ready to let go of our annual gourmet meal tradition. So we did it a few nights early. This Squid Ink and Seafood Pasta was the perfect winter celebration meal. Velveting and comforting with pops of bright fresh tomato and sweet lobster. It pairs beautifully with Sauvignon blanc (or something bubbly!).

Squid Ink and Seafood Pasta

This Squid Ink and Seafood Pasta is a a deliciously dramatic and unexpected meal for an elegant evening.
Ingredients
- 2 tablespoons butter
- 1 onion, diced
- 2 cloves garlic, minced
- pinch chili flakes
- 1/2 pound fresh shrimp, peeled, deveined and finely chopped
- 1/2 pound lobster meat, chopped bite size
- 1/2 cup white wine
- 1 cup plum tomatoes, cut in half
- 2 cups Aneto Natural Squid Ink Cooking Base
- 12 ounces fettuccine (regular or squid ink)
- Juice from half a lemon
- salt and pepper to taste
- Freshly chopped parsley and grated parmesan cheese for garnish
Instructions
- Heat a large pot of well-salted water over high for pasta. When water is boiling, cook pasta in boiling water according to package instructions, draining pasta 2 minutes before “al dente” cook time.
- Meanwhile, melt butter in a large skillet over medium high heat. Add onion and garlic and chili flakes and saute for two minutes, until soft and translucent. Add shrimp and lobster and cook, stirring occasionally for 2 minutes until seafood is just barely cooked through. Use tongs to transfer shrimp and lobster to a plate, leaving juices behind in the pan.
- Add white wine and tomatoes to pan and bring to a boil. Add Aneto Squid Ink Cooking Base and simmer, uncovered for 10 minutes, until sauce mixture has reduced by about half.
- Add cooked pasta to sauce over medium heat and use tongs to toss until all pasta strands are coated in sauce. Add reserved shrimp and lobster meat and any accumulated juices and toss just until combined. Add lemon juice and season with salt and pepper to taste.
- To serve, transfer to serving bowls and garnish with fresh parsley and parmesan cheese.
