There is something so special about receiving a pre-portioned dessert thats been arranged just for you. Something about layering a few simple ingredients in a pretty glass can be totally transformative. These little cups make it look like you’ve spent hours preparing them instead of minutes.

Truly, these easy No-Bake Strawberry Lemon Cheesecake Parfaits can be made in a matter of minutes. The filling is a simple-but-rich combination of cream cheese, Greek yogurt, sugar and lemon juice. Whipping them together in the stand mixer transforms these humble ingredients into a rich, thick, fluffy, creamy concoction with just the right amount of tang. Layer it over crumbled shortbread cookies (or graham crackers) and add a topping of fresh fruit and lemon zest for the perfect little bite.

The Jars
When it comes to serving these, the jars really make all the difference. Mine are actually upcycled Yoplait Oui yogurt jars. Whenever the kids finish one I just soak the labels off with hot water and store them in my cabinet. We’ve amassed a small collection. These addictively tasty No-Bake Strawberry Lemon Cheesecake Parfaits can be whipped up in a matter of minutes and look absolutely adorable in small glasses or jars.
Ingredients
- 1 cup plain Greek Yogurt
- 1 (8-oz.) package cream cheese, softened to room temp
- 1–2 tablespoons heavy cream
- 5 tablespoons sugar
- 1 tablespoon fresh lemon juice
- 2 teaspoons lemon zest, divided
- 1 tablespoon vanilla extract
- 1 cup roughly crushed shortbread cookies or graham crackers
- 1 cup fresh strawberries, washed, hulled and diced
Instructions

In the bowl of a stand mixer fitted with the whisk attachment, beat the cream cheese, Greek yogurt, heavy cream and sugar until smooth. Add the lemon juice, 1 teaspoon of lemon zest and vanilla extract and beat until light and creamy, about 3 minutes.

Add a layer of shortbread cookies crackers to the bottom of each parfait glass. Top the cookies with a layer of the cheesecake filling* then a layer of strawberries. Top with a few additional cookie crumbs and the remaining teaspoon of lemon zest. Serve immediately or cover and chill for up to 24 hours*.
Notes
* For easier assembly, transfer the cheesecake mixture to a sealable plastic bag or piping bag then pipe it into the glasses.
* All components of the parfaits can also be prepared a day in advance and then assembled prior to serving
