2-Bite Black Bean Box Brownies
Ya’ll have heard of black bean brownies, right? I actually developed a from-scratch recipe for one of my clients once upon a time and the recipe ended up getting featured in Redbook magazine, so that was fun. There are plenty of from-scratch recipes out there for black bean brownies…plenty of non-dairy, vegan, gluten-free, superdark chocolate variations. This recipe for 2-Bite Black Bean Box Brownies is not those. This is a quick & easy box brownie adaptation from a mom who is always looking for ways to make the things her kids love a little better for them without a ton of extra fuss.
Boxed Brownies Made Better-for-You
The truth is, I personally really like the flavor of plain ole Duncan Hines boxed brownies. Always have. Fudgey-but-not-too-rich and super easy to make. To make them healthier, I swapped out the requisite eggs and oil for a can of black beans. And you know what? YOU CAN’T TASTE THE DIFFERENCE!

2-Bite Black Bean Box Brownies
Description
Theses adorable 2-Bite Black Bean Box Brownies are decadently fudge and an easy way to sneak some extra nutrition into a favorite family treat.
Ingredients
- 1 box Brownie Mix (I used Duncan Hines)
- 1 can black beans, drained and rinsed
Instructions
- Preheat oven to 350 degrees F.
- Line 3 12-well mini cupcake tin with paper liners (you will have enough brownie batter for about 36 mini brownies).
- Returned drained black beans to can and fill can with fresh water. Pour beans and water into a food processor and process until smooth.
- Add brownie mix and process until combined, about 30 seconds.
- Scoop batter into prepared tins and bake at 350 degrees F for 15 minutes or until a toothpick inserted in the center brownie in each tin comes out clean.
- Remove from oven and cool for 5 minutes before transferring brownie bites to a wire rack. Cool completely then store in an airtight container for up to 3 days.
