Description
This Broccoli Spinach Soup is easy to make with just 5 ingredients and has a gorgeous green color. Top with fresh herbs and seeds to create a cold-weather answer to the Buddha bowl.

- 1 tablespoon olive oil
- 1 small yellow onion, diced
- 1 clove garlic, minced
- 1.5 lbs broccoli florets (fresh or frozen)
- 1 quart low sodium chicken broth
- 4 oz. fresh spinach
- Kosher salt & freshly ground pepper to taste
- Optional Garnishes: fresh lemon juice, plain Greek Yogurt, fresh minced cilantro, toasted sesame seeds, shelled pumpkin seeds
Instructions
- Heat olive oil in a large heavy-bottom pot over medium heat. Add onion and sauté until soft, about 5 minutes.
- Add garlic and sauté for one minute more. Add broccoli and broth and to pot. Reduce heat and simmer for 15 minutes, or until broccoli is tender. Add spinach and stir to combine.
- Remove from heat and puree soup with an immersion blender or transfer to a standard blender and puree until smooth. Season to taste with salt and pepper.
- To serve, garnish as desired with lemon juice, yogurt, fresh herbs and seeds.
