A Breakfast Kids Can Make for Themselves
That’s good news, because now that we’re settling into pandemic summer, any sense of an actual schedule or routine has flown straight out the window, starting with breakfast. Frankly, beyond making coffee, I have absolutely ZERO motivation to dirty the kitchen at 7am and usually encourage the kids to make themselves a bowl of cereal or a toaster waffle. Which is fine except on the days when they’re already deeply involved with legos or another project and become too distracted to stop and eat. It’s not uncommon at this point for one of my children to wander into my home office around 11 am and ask “Hey mom, what’s for breakfast?” (do let me know where to send my application for Mother of the Year, please).
What to eat with Homemade Granola
On days like that, its nice to have a batch of homemade Strawberry Banana Granola in the pantry. This stuff is absolutely jam-packed with wholesome goodness. Rolled oats, walnuts, almonds, chia seeds and even a serving of freeze dried fruit. Its filling, nutritious and delicious too. Plus its easy enough for the kids to fix it themselves. It’s excellent with milk, perfect with a dollop of Greek yogurt or, if you’re like my kids, noshed by the handful while watching their latest Netflix binge show (we’re all currently obsessed with Lemony Sticket).
How to Store Homemade Granola
We store our Strawberry Banana Granola in a tall, airtight glass jar. It will stay good like that for at least a couple of weeks. Its so pretty, I’ll often leave the jar out on the counter as an easy snack suggestion….lord knows we can all use a few wholesome ideas at this point!

Description
This delicious Strawberry Banana Granola recipe puts a fun twist on my all-time favorite homemade granola recipe. Freeze dried strawberries and dried banana chips add gorgeous color and a delicious serving of fruit to this wholesome treat.
Ingredients
- 5 cups old fashioned rolled oats
- 1 cup chopped walnuts
- 1/2 cup slivered almonds
- 2 Tablespoons chia seeds (optional)
- 1/2 cup (1 stick) unsalted butter, melted
- 1/3 cup honey
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon kosher salt
- 1/2 cup freeze dried strawberries
- 1/2 cup dried banana chips
Instructions
- Preheat oven to 300 degrees F. Line a rimmed baking sheet with parchment paper and set aside. Combine oats, nuts and chia seeds (if using) in a large bowl and toss to combine.
- In a small bowl, stir together melted butter, honey, vanilla extract and salt.
- Pour honey mixture over the dry ingredients and toss until evenly combined. Spread the mixture onto prepared baking sheet to create one even layer.
- Place baking sheet in preheated oven for 30 minutes. Granola will be fragrant and golden at the edges when cooked. Remove baking sheet from oven and, use a rubber spatula to gently press the granola into the pan. Allow to cool completely.
- When completely cool, use a spatula to begin gently breaking the granola into pieces. If preferred, dump the entire pan into a large bowl and break granola into pieces with your hands. Add the strawberries and bananas and toss until evenly mixed.
Notes
Granola will store for up to three weeks in an airtight container.
