Easy Rotisserie Chicken Ramen
This easy, weeknight ramen soup has been a family favorite for years, but only recently did I have to genius idea to add shredded rotisserie chicken to the mix. It adds a whole extra layer of rich flavor and heartiness to this delicious meal — and the best part is that its still ready in about 30 minutes!
Is homemade ramen easy to make?
Typically, the broth for an authentic ramen soup requires a long list of ingredients and hours of simmering. With this recipe, we’re using a few shortcuts to achieve maximum flavor in a minimum amount of time. The first step is to start with prepared chicken broth. If you happen to have homemade broth on-hand thats great, but if not, I highly recommend Aneto Natural Chicken Broth (they are a client of mine afterall). All of their broths are truly 100 percent natural, made using the same ingredients I use in my own homemade recipe and the flavor is unparalleled among store-bought broths.
Of course, to achieve the complex, rich umami flavor that is the hallmark of a good ramen broth, we need to add in a few additional ingredients. Garlic, ginger, soy sauce, toasted sesame oil and fresh shitake mushrooms add that authentic flavor punch that makes this soup amazing.
Next we add the noodles. Nothing fancy here. My family loves the good old fashioned dried ramen noodle packets that cost next to nothing and unravel into squiggles in the broth — just be sure to discard those chemical-laden spice packets before you do!
Finally, its time for the fun part: adding the toppings. For our family, half of a *gently* hard boiled egg, a few handfuls of fresh baby spinach and that shredded rotisserie chicken come standard.
From there, everyone adds their favorite garnishes. A few of our favorites included: shredded carrot, roasted seaweed snacks, shelled edamame, sliced radishes, green onion and even diced avocado.

Ingredients
- 2 large eggs, gently hardboiled, peeled and halved
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 1 tablespoon freshly grated ginger
- 4 cups homemade or high quality boxed chicken broth
- 4 ounces shiitake mushrooms, stems removed and thinly sliced
- 1 tablespoon reduced sodium soy sauce
- 2 teaspoons toasted sesame oil
- 4 packages dried ramen noodles, seasoning packets discarded*
- 3 cups baby spinach
- 3 cups rotisserie chicken, shredded
- 1 carrot, grated
- 2 green onions, sliced
Additional optional garnishes: sliced radishes, roasted seaweed snacks, shelled edamame, diced avocado, sesame seeds
Instructions
- Heat olive oil in a large stockpot or Dutch oven over medium heat. Add garlic and ginger, and cook, stirring frequently, until fragrant, about 1-2 minutes.
- Add the mushrooms and saute for an additional 1-2 minutes, until mushrooms begin to soften.
- Whisk in chicken broth, soy sauce, toasted sesame oil and 3 cups water.
- Bring to a boil; reduce heat and simmer until mushrooms have softened, about 10 minutes. Stir in ramen noodles until loosened and cooked through, about 2-3 minutes.
- Stir in spinach and rotisserie chicken and simmer until the spinach begins to wilt, about 2 minutes.
- Serve immediately, with eggs and additional garnishes as desired.
