Strawberry Mojito Mocktail
Just in time for summer, I’ve created the most delicious and refreshing Strawberry Mojito Mocktail. A mocktail, is of course, an alcohol-free cocktail. Its a wonderful choice when you’re in the mood for a refreshing beverage that also feels celebratory and special — minus the alcohol. This one is especially delicious because it starts with a blend fresh fruits and herbs, followed by Karuna Viva — a delightfully purple beverage made with beets, pomegranates and a variety of other whole plants.
What is Karuna?
I recently found out about Karuna beverage through a friend and I really like what they stand for. The company philosophy is rooted in ancient Far East remedies that use food as medicine. Each beverage works to restore health thru whole plant based ingredients, carefully chosen for their functional benefits to restore digestive health with Prebiotics, provide antioxidants, deliver clean protein, and provide sustained energy.
I’m honestly not usually a juice drinker, but I really love that Karuna’s juices use the whole plant, offer excellent nutrition and are far lower in sugar than most store-bought juices. They’re wonderful to sip on their own, but I’ve also found them to be delicious used in a variety of ways — they work great in everything from cocktails and mocktails to popsicles and smoothie bowls.
Karuna Viva is definitely my favorite drink for creating a mocktail. The juice is made from whole berries, pomegranate, beets and ashitaba leaves. Ashitaba is a Supergreen popular in Chinese cooking and medicine for its antioxidant and nutritional value. The juice has a slightly-sweet flavor, just 70 calories and only 8 grams of sugar.
How to make a Strawberry Mojito
Traditional mojitos start with a mixture of limes, fresh mint and white sugar “muddled” (or crushed with the back of a spoon) together in the bottom of a glass. That mixture is usually topped with ice, rum and club soda. There are all sorts of variations on this traditional cocktail with various fruits added along with the lime or different types of alcohol swapped in for the rum.
For this mock-tail version, I started by muddling together chopped strawberries and pomegranate arils, fresh mint leaves and lime wedges, then added Karuna Viva, a handful of ice and some sparkling water. The result is a gorgeous and delicious beverage that feels indulgent without the alcohol or sugar found in most cocktails (and even mock-tails).
Can I swap in other fruits and juices in a mocktail?
This mocktail recipe is definitely very adaptable. You could easily swap in other berries instead of the strawberries and pomegranate or use other varieties of juice instead of Karuna Viva. If you can’t find Karuna, you could use pomegranate or even cranberry juice instead, although you’ll lose some of the nutritional properties that Karuna offers.
This is definitely the perfect drink for summer afternoons. Something light and delicious to sip on the porch or on a pontoon boat.

Description
This mocktail combines Karuna Viva Whole Plant Juice with fresh strawberries, pomegranate and mint for a refreshing, not-too-sweet summertime sipper you’ll love.
Ingredients
- 1 cup chopped strawberries
- 1/4 cup pomegranate arils
- 12 fresh mint leaves
- 1 lime, quartered
- 1 bottle Karuna Viva Whole Plant Juice
- sparkling water or club soda
Instructions
- Divide strawberries, pomegranate, mint and lime wedges between 4 sturdy glasses. Use a mojito muddler or the handle of a wooden spoon to crush the fruit and release the mint oil into each glass.
- Add a handful of ice to each glass. Then gently pour in enough Karuna Viva to fill the glass halfway. Top with sparkling water. Garnish with additional fresh mint and fruit if desired. Serve immediately.
Notes
* If you’d prefer to make this as a pitcher cocktail, simply double the recipe and follow directions but combine everything in a pitcher instead of separate glasses.
* If you’d like to make this a cocktail with alcohol, add a shot of rum to each glass (or as much as desired) before adding sparkling water.
